El Dorado Beef Casserole
Air Date: 4/17/2008
4 to 6 servings

--------------------------------------------------------------------------------
1/2 pound ground beef
1 medium onion, chopped
2 cans (8 ounces each) tomato sauce
1 cup water
1/4 teaspoon chili powder
1 package (9 ounces) tortilla chips, coarsely crushed
1 cup sour cream
1 cup (4 ounces) shredded Monterey Jack cheese
--------------------------------------------------------------------------------

Preheat the oven to 375?F. Coat a 1-1/2-quart casserole dish with nonstick cooking spray.

In a large skillet, brown the ground beef and onion over medium-high heat for 5 minutes. Add the tomato sauce, water, and chili powder; mix well. Reduce the heat to medium-low and simmer for 2 to 3 minutes, or until thickened.

Spread one-third of the beef mixture in the casserole dish then top with one-third of the crushed tortilla chips, one-third of the sour cream, and one-third of the cheese. Repeat the layers two more times, ending with cheese.

Bake for 25 to 30 minutes, or until bubbly and the top is golden
