It can be tough enough to figure out what's for dinner on a typical day. When it's this hot, my goal becomes to find things that are cool to eat and cool to cook. I try to avoid heating up the kitchen with a hot stove or oven, and grilling outdoors is sometimes too steamy in weather like this.
I'm going to post my mother-in-law's recipe for Gazpacho. It's pronounced guh-SPA-cho. It's a basically a cold soup. I've found it to be a great recipe for the summer. Please help me (and the other bloggers) with your ideas for keeping the kitchen cool in the extreme heat.
Gazpacho
Ingredients:
- 1 cup finely chopped, peeled tomato
- 1/2 cup finely chopped green pepper
- 1/2 cup finely chopped cucumber
- 1/4 cup chopped green onion
- 2 Tablespoons red wine vinegar
- 2 Tablespoons olive oil
- 1/2 teaspoon Worcestershire sauce
- 2 teaspoons fresh parsley, chopped
- 1 clove minced garlic (more if you like)
- 2 cups tomato juice
- 1 teaspoon salt
- 1/4 teaspoon fresh ground pepper.
Combine all ingredients, using a stainless steel or glass container. Chill for four hours before serving. You may wish to serve the gazpacho with sour cream or corn chips.
